Ahhh…Fall! Cooler temps. Blustery days. Snuggling under blankets. Oodles of hot tea. Reading Cozy Books by firelight…and of course, Cozy Fall Food. Time for simmering pots of soup and chili, slow-roasted meals, and heavenly, homey aromas throughout the house.
If you played along last month during Easy Freezer Meals Month, you’ll have a freezer full of food. In case you’re beginning from scratch, here are my November menus. Also, a bonus: a few no-fail, last minute throw-together meals for those days you’ve been busy doing holiday prep and just don’t have the energy left to think about dinner. (We’ve all been there, haven’t we?!)

Tuesday, November 13–Breakfast for dinner: Pancakes and scrambled eggs

Quick & Cozy Fall Food
These are a few of my tried-and-true, easy-peasy, too-tired-to-think meal ideas.
Pre-prepped meal from freezer! You’ll find plenty of ideas here and here.
Breakfast for dinner! Grits and eggs, French toast, pancakes, waffles…
Peanut butter and jelly sandwiches! (Oh yes! I went there!)
Grilled cheese or Quesadillas I like to add a thick layer of fresh spinach inside before grilling.
Cheese Board! I always have ingredients on hand to slap together a cheese board. It literally took me less than 10 minutes to make this for dinner tonight. I’ve written a post about Cheese Boards here.
