March Menus
March? Did Someone Say it’s March?
Yes! March is here with its unpredictable weather and cake. Wait? You don’t celebrate St. Patrick’s Day with cake? We don’t either, but March is birthday month in the McCulley family. My husband was born in March. And our firstborn son. And our second born son. That’s a lot of celebrating, and I believe in celebrating at every excuse. The March-born sons have moved away, so I won’t be cooking their birthday dinner (wah!)…but I may possibly still eat cake on their birthdays. Or strawberry rhubarb pie. Or no-bake cheesecake.
Anyhow, here it is…March! We have thirty-one days in this month and–surprise–your family will expect to eat on each and every one of those days. Here’s my plan!
Thursday, March 1–Slow Cooker Green Salsa Chicken (from my freezer cooking day)
Friday, March 2–Burritos (I made a large batch using leftover pinto beans and froze them)
Saturday, March 3–Homemade pizza
Sunday, March 4–Pinto beans and cornbread
Monday, March 5—Too Good to Be True Baked Potato Soup (Skinnytaste cookbook)
Tuesday, March 6–Fish tacos
Wednesday, March 7–Breakfast for dinner: fried eggs, grits, toast, sausage
Thursday, March 8–Crockpot Red Pepper Chicken (from my freezer cooking day)
Friday, March 9–Tostadas (purchased shells, canned refried beans, lettuce, cheese, salsa)
Saturday, March 10–Beef stew and biscuits
Sunday, March 11–Crockpot chicken cacciatore
Monday, March 12–Black-eyed peas and cornbread
Tuesday, March 13–Baked salmon and veggies
Wednesday, March 14–Grilled cheese and tomato soup
Thursday, March 15–Orange Ginger Chicken (from my freezer cooking day)
Friday, March 16–Ground beef tacos
Saturday, March 17–Chili
Sunday, March 18–Corned beef and cabbage (celebrating St. Patrick’s Day one day late)
Monday, March 19—Italian Escarole & White Bean Soup (Skinnytaste)
Tuesday, March 20–Roasted tilapia and vegetables
Wednesday, March 21–Breakfast for dinner: Eggs, toast, bacon
Thursday, March 22–Crockpot Lemon Pepper Chicken (from my freezer cooking day)
Friday, March 23–Fajitas
Saturday, March 24–Veggie burger paninis
Sunday, March 25–Meatloaf, mashed potatoes, green beans, biscuits, birthday cake!
Monday, March 26—Skinnytaste Slow Cooker Chicken Enchilada Soup
Tuesday, March 27–Salmon patties and roasted vegetables
Wednesday, March 28–Quesadillas
Thursday, March 29—Pioneer Woman Chicken and vegetable sheet pan supper
Friday, March 30–Spaghetti
