May Menus
May Menus always translate to lighter Spring fare. Somehow it seems a bit easier to eat healthful foods in the Spring, doesn’t it? My thoughts turn to colorful, crunchy salads, light fish entrees, and quick and easy meals. I also think of things like portability, in case we decide to decamp to the patio or pack up a picnic and take advantage of al fresco dining.
And of course, May menus take into consideration that it’s Cookout Season! Some of my favorite hospitality opportunities happen in the yard: grilled foods, S’mores over a crackling fire in the fire pit, sweet watermelon dripping down chins, or ice cream socials.
May Menus: Welcome, Spring!
May 1 Blackened tilapia tacos
May 2 Recovery Quinoa Salad (from Run Fast Eat Slow Cookbook–affiliate link)
May 3 Crockpot Lemon Pepper Chicken (still using up food from Freezer Cooking Session)
May 4 Bean & cheese burritos (I cook beans from scratch, but canned bean will work)
May 5 Chili (also leftover from freezer; I’m a huge fan of cooking Too Much and freezing!)
May 6 Pioneer Woman Spicy Dr. Pepper Pulled Pork (this has been on the menu for several months; I’m determined to actually make it this time. Proof that plans change. My menu planning is flexible!)
May 7 Tossed Antipasto Salad with Pecorino-Romano Vinaigrette
May 8 Salmon patties, quinoa, roasted in-season veggies
May 9 Quesadilla with cheese, black beans, avocado, chopped grilled chicken
May 10 Crockpot Red Pepper Chicken (from freezer cooking session, see link above)
May 11 Tostadas (purchased shells, homemade or canned refried beans, cheese, toppings
May 12 Spaghetti (from freezer)
May 13 Mother’s Day Tea Party Brunch (assorted fancy finger foods–I’ll be posting more details)
May 14 7 Layer Salad with Blue Cheese Dressing
May 15 Roasted tilapia and vegetables
May 16 BLT with avocado
May 17 Sheet pan chicken dinner
May 18 Ground beef tacos
May 19 Host Cookout for hubby’s business: hamburgers, chicken, salmon, chips, cowboy caviar, salad, baked beans, Oatmeal Chocolate Chip Picnic Cake (more details coming soon!)

May 21 red white and blue cheese cobb salad
May 22 Salmon patties, roasted veggies

It is my prayer that the May Menus encourage and assist you in caring for your family. I consider it a blessing and source of great joy to feed my family, but I realize that not everyone enjoys cooking.
